Ingredients

  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter
  • 2 eggs, separated
  • 1 pint mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.

  2. Gradually whisk in the milk, lemon juice, and lemon zest until smooth.

  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

  4. Remove the saucepan from the heat and whisk in the butter until melted.

  5. In a small bowl, lightly beat the egg yolks. Gradually whisk in a spoonful of the hot mixture to temper the yolks.

  6. Slowly pour the tempered yolks back into the saucepan, whisking constantly.

  7. Return the saucepan to medium heat and cook, stirring constantly, for another 2-3 minutes until thickened.

  8. Remove the saucepan from the heat and let the pudding cool for 10 minutes, stirring occasionally.

  9. In a separate bowl, beat the egg whites until stiff peaks form.

  10. Gently fold the beaten egg whites into the pudding until well combined.

  11. Divide the pudding among 4 serving dishes or glasses and refrigerate for at least 2 hours until set.

  12. Just before serving, top each pudding with a handful of mixed berries.
