- ¼ cup of all-purpose flour
- Pinch of salt
- 2 large eggs, separated
- 1 tsp of vanilla extract
- 2 cups of vanilla wafers
- Whipped cream, for topping
Instructions
-
In a medium saucepan, combine the milk, sugar, flour, and salt. Cook over medium heat, stirring constantly, until the mixture thickens.
-
In a small bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly. Pour the egg mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
-
Remove the pudding mixture from heat and stir in the vanilla extract.
-
In individual serving dishes or a large bowl, layer the vanilla wafers, sliced bananas, and pudding mixture. Repeat the layers until all the ingredients are used, ending with a layer of pudding on top.
-
Cover the pudding with plastic wrap and refrigerate for at least 2 hours, or until chilled and set.
-
Before serving, top the pudding with whipped cream and garnish with additional banana slices and vanilla wafers, if desired.
