  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • 2 cups milk
  • 4 large eggs, separated

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a medium bowl, mix together the sugar, flour, lemon zest, and lemon juice.

  3. In a saucepan, heat the milk until hot but not boiling.

  4. Slowly pour the hot milk into the sugar mixture, whisking constantly.

  5. Beat the egg yolks in a separate bowl, then add them to the sugar mixture, whisking well.

  6. In a clean bowl, beat the egg whites until stiff peaks form.

  7. Gently fold the egg whites into the lemon mixture until well combined.

  8. Pour the pudding mixture into 4 individual ramekins or a baking dish.

  9. Place the ramekins or dish in a larger baking pan and pour hot water into the larger pan until it reaches halfway up the sides of the ramekins or dish.

  10. Bake for 20 minutes, or until the pudding is set and lightly golden on top.

  11. Serve warm or chilled, garnished with a sprinkle of powdered sugar or fresh berries.
