Ingredients

  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 large eggs
  • 125g self-raising flour
  • Zest and juice of 1 lemon
  • 4 tbsp icing sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 1.2-liter ovenproof dish.

  2. In a bowl, cream together the butter and caster sugar until light and fluffy.

  3. Beat in the eggs, one at a time, then fold in the self-raising flour and lemon zest.

  4. Spoon the mixture into the prepared dish and smooth the top.

  5. Bake in the preheated oven for 25-30 minutes until golden and cooked through.

  6. In a small bowl, mix together the lemon juice and icing sugar until smooth.

  7. While the pudding is still warm, pour the lemon drizzle evenly over the top.

  8. Allow the pudding to cool slightly before serving.
