How To Make New Potatoes with Cheddar Cheese Sauce

Ingredients
- 1.5 lbs new potatoes
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1.5 cups milk
- 1.5 cups shredded cheddar cheese
- Salt and pepper, to taste
- Chopped fresh chives, for garnish
Instructions

Place the new potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

In a separate pot, melt the butter over medium heat. Stir in the flour until well combined.

Gradually whisk in the milk, then bring to a simmer, stirring constantly until the sauce thickens.

Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper.

Place the cooked new potatoes on a serving dish and pour the cheddar cheese sauce over the top. Garnish with chopped fresh chives.
