How To Make Spiced Carrot, Coconut & Date Pudding

Ingredients
- 2 cups grated carrots
- 1 cup grated coconut
- 1 cup pitted dates, chopped
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup milk
- 1/2 cup unsweetened applesauce
- 1/2 cup chopped walnuts (optional)
- Whipped cream or ice cream, for serving
Instructions

Preheat the oven to 350°F (175°C) and grease a baking dish.

In a large bowl, mix together the grated carrots, grated coconut, chopped dates, all-purpose flour, brown sugar, melted butter, baking powder, cinnamon, ginger, nutmeg, and salt.

In a separate bowl, whisk together the milk and applesauce. Pour the mixture into the carrot mixture and stir until well combined. If desired, stir in the chopped walnuts.

Pour the batter into the prepared baking dish and smooth the top with a spatula.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool for 10 minutes before serving.

Serve warm with whipped cream or ice cream on top.
