  • 1 cup of white rice
  • 2 cups of coconut milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of raisins (optional)
  • Ground cinnamon, for garnish

Instructions

  1. In a medium-sized saucepan, combine the rice, coconut milk, sugar, and salt.

  2. Bring to a boil over medium heat, then reduce the heat to low and cover the saucepan with a lid.

  3. Simmer for about 45-50 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.

  4. Remove from heat and stir in the vanilla extract and raisins (if using).

  5. Let the pudding cool for a few minutes, then transfer to serving bowls.

  6. Sprinkle with ground cinnamon as a garnish.

  7. Serve warm or chilled.
