Ingredients

  • 4 bell peppers (any color)
  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup cooked quinoa
  • 1 cup marinara sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut off the tops of the bell peppers and remove the seeds and white membranes. Place the peppers in a baking dish.

  3. In a large skillet, cook the ground turkey over medium heat until no longer pink. Add the onion and garlic, and cook until the onion is translucent.

  4. Stir in the zucchini, mushrooms, cooked quinoa, marinara sauce, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.

  5. Spoon the turkey and vegetable mixture into the bell peppers, filling them to the top. Sprinkle with Parmesan cheese.

  6. Bake for 30-35 minutes, or until the peppers are tender and the cheese is bubbly and golden.

  7. Serve hot and enjoy!
