How To Make Bailey’s Dark Chocolate Pudding

Chocolate and coffee are a great match, and this dark chocolate pudding with Bailey’s proves just that. It’s easy to make and is perfectly rich.

  • 1egg
  • cupsmilk
  • cupssugar
  • ¼cupunsweetened cocoa
  • 3tbspcorn starch
  • 1tspinstant coffee,(optional)
  • 2tbspbutter
  • 4ozdark chocolate,chopped
  • ¼cupBailey’s Irish Cream

Optional toppings:

  • whipped cream
  • dark chocolate shavings


  1. Whisk egg in a small bowl. Set aside.

  2. In a medium saucepan, combine milk, cocoa, sugar and cornstarch. Whisk until blended, then place over medium low heat and cook for about 5 to 7 minutes, stirring constantly, until it begins to thicken.

  3. Remove from the heat and pour one ladle of the heated mixture into the bowl with the egg and whisk quickly (in order to temper and not cook the egg). Pour the egg mixture into the chocolate and return to medium-low heat and cook until it just begins to boil.

  4. Shut off the heat and add the chopped chocolate and butter. Stir to combine until both are melted and mixed in. Then stir in the Bailey’s until combined.

  5. Pour into 3 to 4 wine glasses, or 6 ramekins. Chill for a few hours before serving. Garnish with whipped cream and shaved dark chocolate.
