Serves:
Ingredients
- 2 cups fresh raspberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 prepared pie crust
- 1 tablespoon milk
- 1 tablespoon sugar (for sprinkling)
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a large mixing bowl, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the raspberries are evenly coated.
-
Place the prepared pie crust into a 9-inch pie dish. Pour the raspberry mixture into the crust, spreading it out evenly.
-
Place another pie crust on top of the raspberry filling, and crimp the edges to seal the pie. Use a knife to make a few slits on the top crust to allow steam to escape.
-
Brush the top crust with milk and sprinkle with sugar for a golden, crispy finish.
-
Place the pie on a baking sheet and bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is bubbling.
-
Remove the pie from the oven and let it cool for at least 30 minutes before serving. This will allow the filling to set.
-
Serve the raspberry pie with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
