  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 prepared pie crust
  • 1 tablespoon milk
  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large mixing bowl, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the raspberries are evenly coated.

  3. Place the prepared pie crust into a 9-inch pie dish. Pour the raspberry mixture into the crust, spreading it out evenly.

  4. Place another pie crust on top of the raspberry filling, and crimp the edges to seal the pie. Use a knife to make a few slits on the top crust to allow steam to escape.

  5. Brush the top crust with milk and sprinkle with sugar for a golden, crispy finish.

  6. Place the pie on a baking sheet and bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is bubbling.

  7. Remove the pie from the oven and let it cool for at least 30 minutes before serving. This will allow the filling to set.

  8. Serve the raspberry pie with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
