Preparation: 20 minutes
Cooking: 45 minutes
Total: 65 minutes

Serves:

Ingredients

  • 2 cups of fresh raspberries
  • 1/2 cup of sugar
  • 2 tablespoons of cornstarch
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • 1 refrigerated pie crust
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine the raspberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined.

  3. Roll out the pie crust and place it into a pie dish, trimming any excess dough.

  4. Pour the raspberry mixture into the pie crust, spreading it out evenly.

  5. Place the second pie crust on top of the raspberry filling and crimp the edges to seal the pie.

  6. Cut a few slits on the top crust to vent steam during baking.

  7. Brush the beaten egg over the top crust for a golden finish.

  8. Place the pie in the preheated oven and bake for 35-45 minutes, or until the crust is golden brown and the filling is bubbling.

  9. Remove the pie from the oven and let it cool for at least 1 hour before serving.
