How To Make Squashed Peach & Almond Tarts

Ingredients
- 1 sheet of pre-made puff pastry
- 4 ripe peaches, peeled and pitted
- 1/4 cup almond meal
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 egg, beaten
- Powdered sugar, for dusting
Instructions

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Roll out the puff pastry sheet and cut into 4 equal squares. Place them on the prepared baking sheet.

In a medium bowl, mash the peeled and pitted peaches until smooth. Stir in the almond meal, sugar, and vanilla extract.

Spoon the peach mixture onto the center of each puff pastry square, leaving a border around the edges.

Fold the edges of the puff pastry over the peach mixture, creating a tart shape.

Brush the edges of the tarts with the beaten egg.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.

Remove from the oven and allow to cool for a few minutes. Dust with powdered sugar before serving.
