Ingredients

  • 1 lb chicken breasts, sliced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 avocados
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • 8 small flour tortillas

Instructions

  1. Preheat a griddle pan over medium-high heat.

  2. In a bowl, combine the chicken, bell peppers, red onion, olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss to coat well.

  3. Place the chicken and vegetables on the hot griddle pan and cook for 8-10 minutes, or until the chicken is cooked through and the veggies are tender-crisp.

  4. While the chicken and vegetables are cooking, scoop out the flesh of the avocados into a bowl. Add the lime juice, cilantro, salt, and pepper. Mash with a fork until creamy and well combined.

  5. Warm the tortillas on the griddle pan for a minute or two on each side.

  6. Serve the griddled chicken and vegetables on the warmed tortillas and top with the squashed avocado mixture.

  7. Roll up the tortillas and enjoy!
