Ingredients

  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, combine the raspberries, sugar, cornstarch, and lemon juice. Stir until well combined and set aside.

  3. Roll out the pie crusts on a lightly floured surface. Cut out circles about 4 inches in diameter.

  4. Spoon a heaping tablespoon of the raspberry filling onto one half of each circle.

  5. Fold the other half over the filling to create a half-moon shape. Use a fork to crimp the edges and seal the turnovers.

  6. Place the turnovers on the prepared baking sheet and brush the tops with a beaten egg.

  7. Bake for 20 minutes or until the turnovers are golden brown and the filling is bubbling.

  8. Allow the turnovers to cool for a few minutes before serving.
