Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 ½ cup cake flour sifted
  • 2 large egg whites slightly beaten
  • ½ cup fat free plain yogurt
  • ½ cup prune puree
  • 1 ½ cup granulated sugar
  • ½ tsp baking soda
  • ½ tsp instant coffee
  • ¼ cup vegetable oil
  • ½ tsp salt

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Line baking sheets with parchment paper or spray with cooking spray.
  • Whisk together sugar, prune puree, yogurt, oil and egg whites.
  • In a separate bowl stir together flour, cocoa, salt, soda and coffee.
  • Blend the dry ingredients into the wet ones.
  • Drop by spoonfuls onto the baking sheets.
  • Bake for 12-14 minutes.
