Preparation: 20 minutes
Cooking: 45 minutes
Total: 65 minutes

Serves:

Ingredients

  • 2 cups diced fresh pineapple
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 package store-bought pie crusts
  • 1 tablespoon milk
  • 1 tablespoon sugar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a saucepan, combine the diced pineapple, sugar, cornstarch, and salt. Cook over medium heat until the pineapple is tender and the mixture thickens, about 10 minutes.

  3. Stir in the vanilla extract and lemon juice. Remove from heat and let cool.

  4. Roll out one of the pie crusts and line a 9-inch pie dish with it.

  5. Pour the cooled pineapple filling into the pie crust.

  6. Roll out the second pie crust and place it on top of the filling. Press the edges together to seal the pie.

  7. Cut slits on the top crust to allow steam to escape during baking.

  8. Brush the top crust with milk and sprinkle with sugar (optional).

  9. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown.

  10. Allow the pie to cool before serving.
