Serves:
Ingredients
- 2 cups diced fresh pineapple
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 package store-bought pie crusts
- 1 tablespoon milk
- 1 tablespoon sugar (optional)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a saucepan, combine the diced pineapple, sugar, cornstarch, and salt. Cook over medium heat until the pineapple is tender and the mixture thickens, about 10 minutes.
-
Stir in the vanilla extract and lemon juice. Remove from heat and let cool.
-
Roll out one of the pie crusts and line a 9-inch pie dish with it.
-
Pour the cooled pineapple filling into the pie crust.
-
Roll out the second pie crust and place it on top of the filling. Press the edges together to seal the pie.
-
Cut slits on the top crust to allow steam to escape during baking.
-
Brush the top crust with milk and sprinkle with sugar (optional).
-
Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown.
-
Allow the pie to cool before serving.
