Ingredients

  • 1 9-inch pie crust
  • 1 can (20 oz) crushed pineapple
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Press the pie crust into a 9-inch pie dish and set aside.

  3. In a medium saucepan, combine the crushed pineapple (with juice), heavy cream, sugar, cornstarch, and salt.

  4. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

  5. Remove from heat and stir in the butter and vanilla extract until well combined.

  6. Pour the pineapple cream mixture into the prepared pie crust.

  7. Bake for 15 minutes or until the crust is golden brown.

  8. Remove from the oven and let it cool completely before serving.

  9. Slice and serve the pineapple cream pie chilled or at room temperature.
