Preparation: 20 minutes
Cooking: 15 minutes
Total: 35 minutes

  • 1 9-inch pie crust
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3/4 cup water
  • 4 egg yolks
  • 1/3 cup fresh lemon juice
  • 1 tablespoon grated lemon zest
  • 1 cup whipped cream

  1. Preheat the oven to 375°F (190°C). Bake the pie crust according to package instructions and let it cool.

  2. In a saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the water until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

  4. Remove the saucepan from heat and stir in the lemon juice and zest. Allow the filling to cool slightly, then pour it into the cooled pie crust.

  5. Refrigerate the pie for at least 4 hours, or until set.

  6. Just before serving, top the pie with whipped cream.

  7. Slice and serve chilled.
