How To Make Jewelled Pork & Pistachio Pie

Ingredients
- 500g pork loin, diced
- 100g pistachios, shelled
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper, to taste
- 250g ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat your oven to 180°C (350°F).

In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and fragrant.

Add the diced pork loin to the pan and cook until browned on all sides.

Stir in the dried thyme, dried rosemary, and paprika. Season with salt and pepper to taste.

Transfer the pork mixture to a baking dish and scatter the shelled pistachios evenly over the top.

Roll out the puff pastry and place it over the pork and pistachio mixture, pressing down the edges to seal.

Brush the pastry with the beaten egg for a golden crust.

Bake the pie in the preheated oven for approximately 1 hour until the pastry is crisp and golden.

Remove from the oven and let it cool for a few minutes before serving.
