  • 2 Earl Grey tea bags
  • 1/2 cup hot water
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour four teacake molds or use a large muffin tray.

  2. Steep the Earl Grey tea bags in the hot water for 5 minutes, then remove the tea bags and set aside to cool.

  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Beat in the eggs, one at a time, until well combined.

  5. In a separate bowl, whisk together the flour, baking powder, and salt.

  6. Gradually add the dry ingredients to the butter mixture, alternating with the cooled tea. Mix until just combined.

  7. Stir in the milk until the batter is smooth and creamy.

  8. Divide the batter evenly among the teacake molds or muffin cups.

  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  10. Remove from the oven and let cool in the molds or muffin tray for 5 minutes before transferring to a wire rack to cool completely.

  11. Serve the Earl Grey teacakes with a cup of hot tea or enjoy them on their own.
