How To Make Braised Beef & Roasted Garlic Pie

Ingredients
- 2 pounds beef chuck, cut into cubes
- 1 head of garlic
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- Salt and pepper to taste
- 1 sheet of puff pastry
Instructions

Preheat the oven to 350°F.

Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 40 minutes. Squeeze out the roasted garlic cloves and set aside.

In a large pot, heat olive oil over medium heat. Add the beef and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add onion, carrots, and celery. Cook until softened, about 5 minutes.

Return the beef to the pot and add roasted garlic, beef broth, red wine, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 2-3 hours until the beef is tender.

Remove bay leaves and transfer the beef mixture into a 9-inch pie dish.

Roll out the puff pastry and place it over the pie dish, trimming any excess. Cut a few slits in the pastry to allow steam to escape.

Bake in the preheated oven for 25-30 minutes until the pastry is golden brown and crispy.

Allow the pie to cool for a few minutes before serving.
