- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
Instructions
-
Preheat the oven to 325°F (165°C).
-
In a large Dutch oven, heat the vegetable oil over medium-high heat.
-
Season the beef with salt and pepper, then add it to the pot in batches to sear until browned on all sides. Set aside.
-
In the same pot, add the chopped onion, minced garlic, sliced carrots, and celery. Cook until the vegetables are softened.
-
Add the tomato paste and cook for an additional minute.
-
Pour in the red wine and deglaze the pot. Scrape up any browned bits from the bottom.
-
Return the seared beef to the pot, along with any juices. Add the beef broth, fresh thyme, and bay leaves.
-
Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
-
Cook for about 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork.
-
Once cooked, remove the thyme sprigs and bay leaves. Adjust the seasoning with salt and pepper if needed.
