Total: 3 hours and 20 minutes

Serves:

Ingredients

  • 2 pounds beef chuck roast, cubed
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In a large Dutch oven, heat the vegetable oil over medium-high heat.

  3. Season the beef with salt and pepper, then add it to the pot in batches to sear until browned on all sides. Set aside.

  4. In the same pot, add the chopped onion, minced garlic, sliced carrots, and celery. Cook until the vegetables are softened.

  5. Add the tomato paste and cook for an additional minute.

  6. Pour in the red wine and deglaze the pot. Scrape up any browned bits from the bottom.

  7. Return the seared beef to the pot, along with any juices. Add the beef broth, fresh thyme, and bay leaves.

  8. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

  9. Cook for about 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork.

  10. Once cooked, remove the thyme sprigs and bay leaves. Adjust the seasoning with salt and pepper if needed.
