Ingredients

  • 2.2 lbs beef cheeks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the beef cheeks with salt and pepper.

  2. Heat olive oil in a large Dutch oven over medium-high heat.

  3. Brown the beef cheeks on all sides until deeply caramelized. Remove and set aside.

  4. In the same pot, add onion, carrots, celery, and garlic. Cook until softened.

  5. Return the beef cheeks to the pot and add beef broth, red wine, tomato paste, and bay leaves.

  6. Bring to a boil, then reduce heat to low and simmer for 3 hours or until the beef cheeks are fork-tender.

  7. Remove the beef cheeks from the pot and strain the sauce. Return the strained sauce to the pot and simmer until thickened.

  8. Serve the beef cheeks with the sauce and your choice of side dishes.
