How To Make Artichoke & Wild Mushroom Pie

Ingredients
- 1 pre-made pie crust
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup sliced wild mushrooms (such as shiitake or oyster)
- 1 can artichoke hearts, drained and chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 eggs
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until softened, about 5 minutes.

Add the sliced mushrooms to the skillet and cook until they have released their liquid and are browned, about 8 minutes.

Stir in the chopped artichoke hearts and cook for an additional 2 minutes.

In a separate bowl, whisk together the heavy cream, eggs, dried thyme, salt, and pepper.

Spread the mushroom and artichoke mixture evenly in the pie crust. Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.

Pour the egg mixture over the filling, making sure it is evenly distributed.

Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
