Ingredients

  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 jalapeno pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tortillas
  • Optional toppings: guacamole, sour cream, salsa, shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the bell peppers, onion, jalapeno pepper, and garlic to the skillet.

  3. Cook for 5-7 minutes, until the vegetables are tender-crisp.

  4. In a small bowl, mix together chili powder, cumin powder, paprika, salt, and black pepper.

  5. Sprinkle the spice mixture over the vegetables and stir well to coat.

  6. Cook for another 2-3 minutes, until the spices are well combined and fragrant.

  7. Warm up the tortillas in a separate skillet or in the microwave.

  8. Place a spoonful of the vegetable mixture onto each tortilla and roll it up tightly.

  9. Serve the spicy vegetable fajitas with your choice of toppings.
