  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/4 cup almond butter
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • Optional toppings: chopped nuts, unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners or grease with coconut oil.

  2. In a large bowl, mix together the mashed bananas, eggs, and almond butter until well combined.

  3. Add in the coconut flour, almond flour, baking powder, cinnamon, and salt. Stir until everything is evenly incorporated.

  4. Divide the batter evenly among the muffin cups, filling each one about 3/4 full.

  5. If desired, sprinkle the optional toppings over the muffins.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool for a few minutes before removing them from the tin. Enjoy!
