  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup blueberries
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup plain yogurt
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  2. In a large bowl, combine the oats, flour, sugar, baking powder, baking soda, and salt. Stir in the blueberries.

  3. In a separate bowl, whisk together the milk, vegetable oil, yogurt, vanilla extract, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Divide the batter evenly into the muffin tin cups.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
