Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 small bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with non-stick spray.

  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.

  3. Add onion, bell pepper, jalapeno pepper, and garlic to the skillet. Cook until vegetables are tender.

  4. Stir in diced tomatoes, kidney beans, tomato paste, beef broth, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.

  5. Spoon the chilli mixture into the prepared muffin tin, filling each cup about ¾ full. Sprinkle shredded cheddar cheese on top of each cup.

  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
