Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2 blood oranges, zest and juice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp poppy seeds
  • For the drizzle:
  • 1 cup powdered sugar
  • 2 tbsp blood orange juice

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners.

  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and poppy seeds.

  3. In a separate bowl, whisk together the milk, oil, blood orange zest, and juice from one blood orange.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. While the muffins are baking, prepare the drizzle by whisking together the powdered sugar and the juice from the remaining blood orange. Adjust the consistency with more juice or powdered sugar as needed.

  8. Once the muffins are done, remove them from the oven and let cool for a few minutes. Then, drizzle the blood orange glaze over the muffins.

  9. Serve warm or at room temperature.
