How To Make Savannah Smile Lemon Poppy Seed Muffins

Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp poppy seeds
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- Zest of 1 lemon
Instructions

Preheat oven to 400°F (200°C). Grease a muffin tin or line with muffin cups.

In a medium bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds.

In a separate bowl, whisk together milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest.

Pour wet ingredients into dry ingredients and stir until just combined.

Fill muffin cups 2/3 of the way full with batter.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
