  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp poppy seeds
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Grease a muffin tin or line with muffin cups.

  2. In a medium bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds.

  3. In a separate bowl, whisk together milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest.

  4. Pour wet ingredients into dry ingredients and stir until just combined.

  5. Fill muffin cups 2/3 of the way full with batter.

  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  7. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
