Ingredients

  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine sugar and water. Cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture reaches 240°F (115°C) on a candy thermometer.

  2. In a mixing bowl, beat egg whites and cream of tartar on high speed until soft peaks form.

  3. Slowly pour the hot sugar syrup into the beaten egg whites while continuing to beat on high speed.

  4. Add vanilla extract and continue beating until the mixture becomes thick and glossy, about 5-7 minutes.

  5. Allow the marshmallow creme to cool completely before transferring to an airtight container. It will continue to thicken as it cools.
