How To Make BC Cherry Jam

Ingredients

  • 4 cups BC cherries, pitted
  • 2 cups granulated sugar
  • 2 tbsp lemon juice

Instructions

  1. In a large saucepan, combine the cherries, sugar, and lemon juice.

  2. Cook over medium heat, stirring frequently, until the sugar has dissolved and the cherries have released their juices, about 5 minutes.

  3. Increase the heat to high and bring the mixture to a boil. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the jam thickens.

  4. While the jam is cooking, sterilize four 8-ounce jars and lids by boiling them in a large pot of water for 10 minutes. Remove the jars and lids from the water and set aside to cool.

  5. Once the jam has thickened, remove it from the heat and carefully ladle it into the prepared jars, leaving 1/4 inch of headspace. Wipe the rims of the jars clean and place the lids on top, tightening them until just finger-tight.

  6. Place the filled jars back into the pot of boiling water and process for 10 minutes. Remove the jars from the water and let them cool on a wire rack for 12-24 hours before storing.

  7. Store the sealed jars of BC Cherry Jam in a cool, dark place for up to 1 year.
