How To Make Blueberry, Coconut & Lime Ice Cream

- 2 cups blueberries
- 1 can coconut milk
- 1/2 cup sugar
- 1/4 cup lime juice
- 1 tsp lime zest
- 1/4 cup shredded coconut
Instructions

In a blender, combine the blueberries, coconut milk, sugar, lime juice, and lime zest. Blend until smooth.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Once the ice cream reaches a soft-serve consistency, transfer it to a lidded container. Stir in the shredded coconut.

Place the container in the freezer for at least 4 hours or until firm.
