Ingredients

  • 2 ripe mangoes, diced
  • Juice of 2 limes
  • 1 cup coconut cream
  • 4 scoops of vanilla ice cream
  • 1/4 cup shredded coconut, toasted
  • Fresh mint leaves, for garnish

Instructions

  1. In a blender, combine the diced mangoes and lime juice. Blend until smooth and set aside.

  2. In a small saucepan, warm the coconut cream over low heat until it reaches a pourable consistency. Remove from heat and let it cool slightly.

  3. To assemble the sundaes, spoon a layer of the mango puree into each serving glass. Add a scoop of vanilla ice cream on top.

  4. Drizzle the warm coconut cream over the ice cream and garnish with toasted shredded coconut.

  5. Repeat the layers, ending with a dollop of mango puree on top.

  6. Garnish with fresh mint leaves and serve immediately.
