Ingredients

  • 1 cup of pineapple juice
  • 1/4 cup of rum
  • 1/4 cup of strong brewed coffee
  • 8 ladyfingers
  • 1 cup of diced mango
  • 1 cup of diced kiwi
  • 1 cup of diced pineapple
  • 1 cup of mascarpone cheese
  • 1/2 cup of powdered sugar
  • 1 tsp of vanilla extract
  • Whipped cream (for serving)
  • Shredded coconut and mint leaves (for garnish)

Instructions

  1. In a shallow dish, combine the pineapple juice, rum, and brewed coffee. Dip each ladyfinger into the mixture, coating both sides, and place them in a single layer in a serving dish.

  2. In a separate bowl, mix together the diced mango, kiwi, and pineapple. Spread half of the fruit mixture evenly over the ladyfingers.

  3. In another bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Spread half of this mixture over the fruit layer.

  4. Repeat the layers with the remaining ladyfingers, fruit mixture, and mascarpone mixture.

  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld together.

  6. Before serving, top with whipped cream and garnish with shredded coconut and mint leaves.
