Ingredients

  • 2 ripe persimmons
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.

  2. Peel the persimmons and remove any seeds. Mash them with a fork until smooth.

  3. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  4. Add the mashed persimmons, vegetable oil, and vanilla extract to the dry ingredients. Mix well.

  5. Fold in the chopped walnuts, if desired.

  6. Pour the batter into the greased cake pan and smooth the top with a spatula.

  7. Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool completely before serving.
