  • 1 cup persimmon pulp
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

  3. Add the persimmon pulp to the butter mixture and mix until well combined.

  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

  5. Gradually add the dry ingredients to the persimmon mixture, mixing until just combined.

  6. Fold in the raisins and chopped walnuts.

  7. Drop teaspoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes, or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
