  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1 cup cold milk
  • 1 box lemon instant pudding mix

Instructions

  1. In a bowl, mix together graham cracker crumbs and melted butter. Press the mixture into the bottom of a serving dish to create the crust.

  2. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

  3. In a separate bowl, combine the lemon juice, lemon zest, cold milk, and instant pudding mix. Whisk until well blended and thickened.

  4. Fold the whipped cream into the lemon mixture until fully combined.

  5. Pour the filling over the crust in the serving dish. Smooth the top with a spatula.

  6. Refrigerate for at least 4 hours, or overnight, until set.

  7. Serve chilled and enjoy!
