  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the oats, flour, cocoa powder, baking soda, and salt.

  3. In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  4. Beat in the vanilla extract and egg until well combined.

  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

  6. Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.

  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
