How To Make Chocolate Truffle Energy Bites

Put together a vegan dessert with these decadent chocolate truffle bites! It’s made with Medjool dates, peanuts, and sunflower seeds for a healthy treat.

Ingredients

  • 14Medjool dates,pitted, soaked in warm water for 10 minutes
  • 2tsppure vanilla extract
  • ¼cupunsweetened cocoa powder
  • ½cupsalted peanuts,dry roasted
  • ½cupsunflower seeds

For Optional Coating:

  • cocoa powder
  • shredded coconut
  • nuts,crushed
  • mini chocolate chips

Instructions

  1. Soak the dates in warm water for 15 minutes, then drain them. Or chop them up into tiny pieces.

  2. Put the dates, vanilla extract, cocoa powder, peanuts, and sunflower seeds into the blender or food processor, and blend for 4 to 5 minutes or until a thick oily “dough” ball is formed. The dough will be oily from the seeds and nuts.

  3. Scrape down the sides of the blender or food processor a few times to get all of the dry ingredients to the bottom.

  4. Once a dough is formed, scoop the dough, about 1 tablespoon each, and roll it into a smooth ball by hand.

  5. If rolling into the desired coatings, spread the ingredients onto a plate and roll the moist dough ball around to fully cover. 

  6. Serve and enjoy!
