How To Make Spago’s Chocolate Truffle Cake

Ingredients
- 4 oz. semisweet chocolate, chopped
- 4 tbsp. unsalted butter
- 1/4 cup granulated sugar
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 4 oz. dark chocolate truffles
Instructions

Preheat the oven to 375°F and grease four 4 oz. ramekins.

In a double boiler, melt the semisweet chocolate and butter.

In a separate bowl, whisk the sugar and eggs until fluffy.

Add the chocolate mixture to the eggs and whisk until smooth.

Sift in the flour, baking powder, and salt, and stir until just combined.

Spoon a small amount of batter into each ramekin, followed by a truffle, and then cover with more batter.

Bake for 12-15 minutes until the cake is set on top but still gooey in the center.

Let cool for 5 minutes before serving.
