How To Make Chocolate & Apricot Pud with Glossy Chocolate Sauce

Ingredients
- 150g dark chocolate, chopped
- 150g dried apricots, chopped
- 150ml milk
- 150ml heavy cream
- 70g granulated sugar
- 2 eggs
- 40g unsalted butter, melted
- 1 tsp vanilla extract
- Pinch of salt
Instructions

Preheat the oven to 180°C (350°F).

In a heatproof bowl, melt the dark chocolate over a pan of simmering water. Set aside to cool slightly.

In a separate bowl, beat together the eggs, sugar, melted butter, and vanilla extract until well combined.

Gradually add the melted chocolate into the egg mixture, whisking constantly.

Stir in the chopped apricots.

In a saucepan, heat the milk and heavy cream until just boiling.

Slowly pour the hot milk and cream mixture into the chocolate mixture, whisking constantly.

Pour the mixture into 4 individual ramekins or a large baking dish.

Place the ramekins or baking dish in a larger roasting pan filled with hot water, creating a water bath.

Bake for 25-30 minutes or until set but still slightly wobbly in the center.

Remove from the oven and allow to cool slightly before serving.
