Ingredients

  • 500ml heavy cream
  • 200g condensed milk
  • 1 cup mixed dried fruits
  • 1/2 cup brandy
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/4 cup chopped nuts (such as almonds or walnuts)
  • 1/4 cup candied cherries, chopped
  • 1/4 cup crushed gingerbread cookies

Instructions

  1. In a small bowl, soak the dried fruits in brandy for 30 minutes.

  2. In a mixing bowl, whip the heavy cream until stiff peaks form.

  3. Gently fold in the condensed milk until well combined.

  4. Add the soaked dried fruits, cinnamon, nutmeg, cloves, and ginger to the cream mixture and fold gently.

  5. Fold in the chopped nuts, candied cherries, and crushed gingerbread cookies.

  6. Transfer the mixture to a loaf pan or airtight container.

  7. Cover and freeze for at least 6 hours or overnight.

  8. Serve the Christmas Pud Ice Cream in scoops or as desired.
