How To Make Salted Caramel Cheesecake

Ingredients
- 200g digestive biscuits
- 100g unsalted butter, melted
- 400g cream cheese
- 200g caster sugar
- 2 large eggs
- 1 tsp vanilla extract
- 100g caramel sauce
- 1/4 tsp sea salt
Instructions

Preheat the oven to 180°C (350°F).

Crush the digestive biscuits into fine crumbs and mix with the melted butter. Press the mixture into the base of a 20cm springform cake tin.

In a separate bowl, beat the cream cheese and caster sugar together until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Pour half of the cream cheese mixture onto the biscuit base. Drizzle half of the caramel sauce on top and sprinkle with half of the sea salt. Repeat with the remaining cream cheese, caramel sauce, and sea salt.

Bake in the preheated oven for 40-50 minutes, or until the cheesecake is set but still slightly wobbly in the center. Leave to cool in the tin for at least 4 hours, or overnight in the refrigerator.

Before serving, remove the cheesecake from the tin and place on a serving plate. Drizzle with extra caramel sauce and sprinkle with a pinch of sea salt. Slice and enjoy!
