How To Make Mini New York cheesecakes

- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1/4 cup sour cream
- 1 egg
- 1/4 cup graham cracker crumbs
Instructions

Preheat the oven to 325°F (163°C). Line a muffin tin with paper liners.

In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.

Add the sour cream and egg, and mix until well combined.

Divide the mixture evenly among the muffin cups, filling each one about 3/4 full.

Sprinkle graham cracker crumbs on top of each cheesecake.

Bake for 20-25 minutes, or until the edges are set but the center is slightly jiggly.

Remove from the oven and let cool in the muffin tin for 10 minutes.

Transfer the cheesecakes to a wire rack to cool completely.

Refrigerate for at least 2 hours before serving.
