How To Make Mini Cheesecakes

Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp melted butter
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1 egg
Instructions

Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.

In a small bowl, combine graham cracker crumbs and melted butter. Press a tablespoon of the mixture into the bottom of each paper liner.

In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add sour cream and beat until well combined. Then add the egg and beat until fully incorporated.

Divide the cream cheese mixture evenly among the paper liners, filling each about 2/3 full.

Bake for 15-20 minutes until the edges are set and the centers are slightly jiggly.

Remove from oven and let cool in the muffin tin for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, refrigerate for at least 2 hours before serving.

Garnish with fresh fruit or a drizzle of chocolate if desired.
