  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar, for coating
  • 1 tsp ground cinnamon, for coating

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, vanilla extract, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Spoon the batter into the muffin tin, filling each cavity about ⅔ full.

  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. In a small bowl, combine the sugar and cinnamon for the coating.

  8. Once the muffins are cool enough to handle, dip each one into the melted butter, then roll in the cinnamon sugar mixture.

  9. Serve warm and enjoy!
