How To Make Malt Chocolate Cheesecake

Ingredients
- 200g digestive biscuits
- 100g butter, melted
- 200g malt chocolate
- 300g cream cheese
- 100g sugar
- 3 eggs
- 1 tsp vanilla extract
- 200ml whipping cream
Instructions

Crush the digestive biscuits into fine crumbs and mix with the melted butter. Press into the base of a 9-inch springform

cake tin and refrigerate for 30 minutes.

Preheat the oven to 160°C (320°F).

Melt the malt chocolate in a heatproof bowl over a pan of simmering water.

In a separate bowl, beat together the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each

addition. Stir in the vanilla extract and melted chocolate.

Pour the mixture over the chilled biscuit base and smooth the top.

Bake in the preheated oven for 60 minutes or until set. The center should still have a slight jiggle.

Remove from the oven and let it cool completely in the tin. Refrigerate for at least 4 hours or overnight.

Whip the whipping cream until stiff peaks form. Spread over the chilled cheesecake.
