Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 4 eggs
- 200g self-raising flour
- 1 tsp mixed spice
- 100g dried cranberries
- 100g raisins
- 100g currants
- 50g chopped mixed nuts
- Zest of 1 orange
- Juice of 1/2 orange
- 1 tbsp brandy (optional)
- Icing sugar, for dusting
Instructions

Preheat the oven to 160°C (320°F). Grease and line a 6-inch round cake tin.

In a large mixing bowl, cream the butter and sugar together until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Fold in the flour and mixed spice until well combined.

Stir in the dried cranberries, raisins, currants, mixed nuts, orange zest, orange juice, and brandy (if using), until evenly distributed.

Pour the mixture into the prepared cake tin and smooth the top with a spatula.

Bake in the preheated oven for 2 hours, or until a skewer inserted into the center comes out clean.

Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.

Once cooled, dust the top of the cake with icing sugar before serving.
