How To Make Miniature Omelettes with Ricotta

Ingredients
- 4 eggs
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley, chives, or basil)
- Salt and pepper to taste
- Cooking spray
Instructions

Preheat the oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray.

In a medium bowl, beat the eggs. Add the ricotta cheese, Parmesan cheese, fresh herbs, salt, and pepper. Mix until well combined.
