Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray.

  2. In a medium bowl, beat the eggs. Add the ricotta cheese, Parmesan cheese, fresh herbs, salt, and pepper. Mix until well combined.

  3. Pour the egg mixture into each muffin cup, filling it about 3/4 full.

  4. Bake for 12-15 minutes, or until the omelettes are puffed and set in the center.

  5. Remove from the oven and let cool for a few minutes. Use a butter knife to gently remove the omelettes from the muffin tin.
